• 100 g / 3 ½ cup butter, softened

• 100g / 3 ½ oz caster sugar

• 1 egg, preferably outdoors or biological

• 100g / 3 ½ oz cake flour

and chocolate sauce

• 25g / ¾ oz butter

• 142ml/4.9fl ounces whipping cream

• 75g / 2 ½ cup good quality dark chocolate, crushed

• A little brandy, rum, Amaretto or Bailey

Method for chocolate with cherries:

This is a good cake to make for that special person in your life - not too hard, and all delicious! Serve with a glass of brandy what you choose to add the chocolate sauce - I love Brandy, but the rum, Amaretto or Bailey also work well.

Cooking time: 1 hour

Preheat oven to 180 º C/350 º F / gas 4 and grease a small baking dish (9 or 10 inches) and butter.

Mix cocoa powder with a few tablespoons of boiling water and stir until mixture is nice and smooth.

In another bowl or mixer, beat butter and sugar until light and fluffy, then add the cocoa mixture, eggs, flour and yeast. Mix everything very well, pour into your baking sheet and sprinkle with cherries and nuts on top before putting in oven for about 25 minutes.

While the cake is cooked, make your chocolate sauce. Place the butter in a saucepan with the cream and bring to a boil. Turn off heat and add the chopped chocolate in a saucepan. Give all a good stir, then leave for 5 minutes for the hot cream can melt the chocolate. Add a touch of the desired alcohol and stir until well blended.

To check if the cake is done, give a little jiggle, and if it does not wobble too much as it is done, if not, take a few minutes in the oven.

Once ready, pour the hot chocolate sauce over the cake and share a plate or serve two small plates with a dollop of vanilla ice cream or cream. Delicious!
