Ok, fine. I know exactly what you think! "What? Another cake!?" But what else can I say? My friend Aisah need emotional support at the same time her first cake so I can not help it!
Wow, this is another winner, I tell you! Bananas and chocolate are obviously very well together. Combine it with some delicious whipped cream and you have a ticket to taste bud heaven!
My neighbor actually came to report only the cake and told me that he had no words to describe how good it was. lol the sad eater, definitely take it as a compliment!
Banana chocolate cream cake
Inspired by Cafe Gratitude I Am Rapture
This recipe is for a pot of 6 "diameter or the bathtub.
1 cup soft dates, chopped
2 tablespoons lemon juice
1 1 / 2 c. tablespoon vanilla
Pinch of salt
1 / 2 cup raw carob powder and cocoa (I used 1 / 4 cup each)
1 1 / 2 cup finely chopped almonds or loosely packed left on the pulp production of milk (wet pulp is fine)
1 cup finely field of dried coconut
1 / 2 cup cashews, finely ground
1 cup cashews or a mixture of cashews and macadamiapähkinöitä
1 cup fresh coconut milk (Simply mix one part dried coconut with 3 parts water at high speed mixer)
1 / 8 to 1 / 4 cup honey or agave (depending on how sweet you like)
1 tablespoon lemon juice
1 tablespoon vanilla
Pinch of salt
Oil 1 / 2 cup coconut, melted
1 tablespoon lecithin * (1 + 1 tablespoon of psyllium teaspoon)
* Lecithin is an emulsifier acts. Searching for lecithin (preferably non-GMO), in granular or powder form, from the local HFS. If you use the pellets, be sure to grind out quickly grinder blender.
Layer bananas and Decoration
2 or 3 ripe bananas, sliced
To make the whipped cream:
Mix all ingredients except coconut oil and lecithin until smooth. Add coconut oil and lecithin and mix until completely blended. Located in the refrigerator for 1 hour.
You should be whipped, but I'm sure you will find other ways to use it. lol
For the cake:
Place dates in food processor and blend until smooth. You may need to add a little water.
Then add remaining ingredients and mix until smooth.
Grease a baking pan with a little spring form 'of coconut oil, or a plastic margarine tub average line.
Next form an even layer on the bottom half of the cake made.
Garnish with banana slices, followed by some of the whipped cream. Refrigerate.
When very firm, form another cake layer. Then cover with more banana slices. (Remember to save some for decoration).
Again top with whipped cream and refrigerate.
When firm, gently remove the cake pan or margarine and place in serving dish.
Garnish with banana slices and serve.
~ For the whipped cream, I used psyllium husks instead of lecithin, as suggested in the Cafe Gratitude recipe. As a result, I realized I had to let the cream set in the freezer instead of the fridge. The consistency also made it difficult for the cake to hold its shape and once at room temperature. However, this can not be a major problem if you keep the cake pieces in the freezer defrost as needed.
~ It is key to finely grind the walnuts, blender or coffee grinder speed before processing the remaining ingredients. This ensures that the layer cake is a wonderfully smooth.
~ To use the layers of cake with whipped cream easy needs to be completely fixed (set in the fridge or freezer first). If you think that the cream tends to give, while tapping the bottom of the cake, try forming the cake layer on a second surface (such as counter or plate), then transfer it to the pan.
~ For a simpler version of this, just put a cake layer, followed by slices of banana. Top with whipped cream and let stand in refrigerator / freezer. Garnish and serve.
